what's cooking? Tofu Helper Asian Style


"A complete and tasty meal in a bowl in 20 minutes!"
serves 4-5
Preparation time: about 20 minutes

Ingredients:
1 medium onion, grated or chopped finely
2 Tablespoons oil
1 block tofu, cubed (approximately 300gm/11oz)
1/4 cup soy sauce
1 liter/ 4 cups water
frozen corn
frozen peas or green beans
1 grated carrot
1 grated zucchini
1/2 package rice thread noodles
2 grated garlic cloves
1/8 teaspoon cumin powder
1/2 teaspoon dried parsley flakes
1 Tablespoon brewers yeast

Instructions:

Saute the onion in oil on a medium heat until onion is soft. Add the tofu cubes and lightly brown the edges. Add water and remaining ingredients, adjusting seasoning to taste.

When broth has come to a boil, add the rice threads for one minute, then remove from heat and serve.

Tips:

  • Add more garlic. Many sources quote garlic for health purposes as reducing congestion, decreasing blood pressure, aiding in cleansing of the blood, and other benefits. I often grate a whole garlic clove per person into the soup.
  • Use other herbs as well. I add the parsley to help decrease congestion, add extra trace minerals and iron, as well as the pleasant flavor.
  • Use previously frozen and thawed tofu for a different texture and absorption of the sauce.
  • Use a variety of fresh vegetables, whatever your family enjoys.
