Tofu Chocolate Pie
serves 8 - 12
Preparation time: 1/2 hour
Ingredients:
1 block tofu (approximately 454gm/1 lb.)
1 bag chocolate chips or broken chocolate bars (300gm/11oz)
1/4 - 1/2 cup soy milk or water
crust:
1/4 cup quick oats
1/4 cup ground almonds
Instructions:
Break up the tofu in a blender, add the liquid a little at a time blending until smooth. Don't add more liquid than necessary, or your pie won't set well.
Melt chocolate gently in a microwave oven with low power, stirring every 30 seconds. Add the melted chocolate to the blender and blend until smooth and evenly mixed.
Mix the crust ingredients and pat into a pie plate.
Pour tofu mixture into pie plate, and smooth the top.
Refrigerate for at least a couple of hours to set the pie. It's a very creamy thick texture. Mmmm, protein and chocolate, two of life's basic food groups together!
Tips:
Save a little of the melted chocolate and drizzle it on top of the finished pie for a fancy effect.
Add a little real vanilla for extra deluxe luxury flavor.
